The Basics: DIY Pesto Sauce

I love pasta. But as much as I love the usual red or white sauce, my audience does tire. Thus, the birth of the Pesto Sauce as a household staple! Since I learned how to make them, we never run out of stock as it's really easy, healthy and goes with absolutely anything!

What you need:
2 C Packed Fresh Basil Leaves
3 T Chopped Garlic
1/4 C Roasted walnuts
2/3 C Extra Virgin Olive Oil
1/2 C Grated Parmesan Cheese
Salt

What to do:
1. Clean basil, and chop roughly, removing tough stems. 
2. Roast the walnuts in pan or oven without oil for 5-10minutes until they change color a bit. Make sure not to burn. 
3. In a food processor, pulse together basil, garlic and walnuts, with half the olive oil. Add oil accordingly in between pulses, use more if you wish. Continue blending til you reach a good consistency- still somewhat coarse, and not too fine. 
4. Add cheese. 

Serve over pasta (as above) or serve it with bread, tomato and white cheese like so: 
pesto pandesal (Batangas pugon-oven baked crusty rolls) with tomatoes and keso puti (local white cheese)
