(Not) Fried Chicken

I speak for a big universe when I say that even once in our lives, especially the first few parts of it, that Fried Chicken is everyone's favorite. It's a no-brainer, basic, tasty dish. Unfortunately, our doctors might not agree. Fried foods, they say aren't really the healthiest stuff. Thus begins the quest to marry the 2.

Presenting the (Not) Fried Chicken. It's baked to perfection, and the use of Cornflakes and toasted crushed croutons gives the much needed crisp. Another thing good about these also is that it's great even right off the fridge, since it does not contain saturated fats that freezes when cold making the chicken tough. These babies are soft and moist even when cold. 
 
(not) Fried Chicken
What you need:
600g Chicken thigh fillet
1 C natural unflavored yogurt
3 T spicy mustard
salt and pepper
3/4 C Cornflakes (crushed) not frosted or honey coated
3/4 C Croutons (toasted and crushed)

For the dip:
Tomato salsa
1/2 C yogurt mixed with 1 T mustard

What to do:
1. Clean the chicken, and cut to thick strips. 
2. Season chicken with salt and pepper. 
3. In a separate bowl mix together yogurt and mustard. Use as marinade. 
4. Leave chicken to soak for at least 5 hours. 
5. Coat chicken in cornmeal and crushed and toasted croutons. Line them in a baking dish and bake for 20 minutes or until chicken is cooked through. 
6. Serve with your assortment of healthy dips.
